Gin and Tonic Cup Cakes

Want to get your bake on but looking for something a little bit more grown up, try these Gin and Tonic cupcakes, they are always a hit and are light and fluffy with a sharp zest of lime.

This recipe makes about 9 cupcakes so double up if you want to make more.

Ingredients for the Cakes:

175g Unsalted Butter

175g Caster Sugar

175g Self Raising FlourBombay Sapphire

2 Eggs

6 tbsp Tonic Water

4 – 6 tbsp Gin (I used Bombay Sapphire which is delicate and had to add more, Hendricks would be better but add and taste)

Ingredients for the butter Icing:

250g Unsalted Butter

500g Icing Sugar

2 x Juice of LimeLime

6 tbsp Gin (add and taste)


  1. Mix the sugar and butter together in a mixing bowl, once creamed add the eggs gin and tonic water, and then sieve the flour into the mixture.
  2. Pre heat your oven to gas mark 8/200 degrees and add the mixture evenly to muffin cases, I used pink ones. Bake for 18-20 mins
  3. For the icing, mix together the butter and icing sugar adding the sugar in stages, then add the lime juice and gin to taste. Pipe on once your cakes are cool and add a wedge of Lime for decoration.

Best served in the pink cupcake cases to give it that party feel!
